Emmer
Emmer is one of the oldest types of grain known to man and a predecessor of durum wheat. Today, this valuable and still primitive grain, which was considered the "wheat of Rome" in ancient Rome, has been somewhat forgotten. The emmer wheat, which is protected from external influences by a husk, is very rich in protein and minerals and gives stews, salads or doughs a savoury and slightly nutty taste.
